How to make Shakshuka, and why did it end up in Spain.



Introduction

   Given Andalusia's rich eventful history, it has an unordinarily diverse culture. There are Arabic, Roman and other influences. Shashouka is an Arabic dish, connecting it to the time that Muslims reigned over Andalusia (711-1492). The whole Iberian Peninsula was called Al-Andalus in the Arabic world, and the name 'Andalusia' originates from this heritage.



Recipe

  • 4 Pc eggs
  • 1 Pc red union
  • 1 Pc paprika
  • 1/2 Pc chilipepper
  • 3 Tbs yoghurt
  • 2 Tbs sour cream
  • 1½ Tbs bastard sugar
  • handfull parcely
  • 400 grams (canned) tomatoes

A fry bread wrap

Instructions

  1. Cook everything except the eggs, yoghurt, sour cream and parcely for 8-10 minutes
  2. Dig 4 holes for the eggs and break an egg into each one of them
  3. Sprinkle with parcely (and other fresh herbs of choice)
  4. Serve with the yoghurt cream on the side
